Effectively monitor the shutdown operation of cheese making equipment including but not limited to: Pasteurizers, separators, plate heat exchangers, analyzing equipment and cleaning equipment during the end of run shut down. Record and interpret data to make informed decisions and/or recommendations for optimum cheese making conditions. Interact with operator, sanitation coordinators and supervisor as well as contract vendors to ensure proper sanitation of the equipment noted above. Communicate with operators to minimize down time. CIP all circuits as necessary and break down and clean all related equipment as needed to ensure sanitary conditions. Re-assemble all equipment prior to start up. Perform assigned master sanitation duties.
