Failure to pass the drug/alcohol testing will result in immediate termination.CategoryFood and Beverage Basic QualificationsMinimum four years experience in high-volume Galley/F&B operationCertified working Chef or equivalent degree in Culinary ArtsTechnical and functional understanding of the ship-based food operationExcellent working knowledge of food and beverage products, services and equipmentAbility to calculate and control cost potentials/projections; understand the impact on budgetUnderstanding of local and international beverage lawsBe at least 21 years of ageBe able to speak, read and write fluent EnglishWillingness to live and work onboard one of our vessels for a certain length of time (based on position)Be able to work a seven-day, 70-84 hour week with limited time offBe able to adhere to Disney Cruise Line appearance guidelinesAgree to share a cabin with other crew membersEnjoy working in a high-volume, fast-paced, guest-service oriented environmentBe flexible with your work schedule, job duties and work locationsAppreciate diversity among guests and crewBusinessDisney Cruise LinePreferred QualificationsShip experienceCollege education or equivalent industry experiencePostal Code-- ResponsibilitiesManage accountability for all Galley staff for day-to-day and long-term operationEnsure recipe format, pictures, etc. are consistent in all food outletsOrganize food tastings and dummy runs of new products and menu contentFacilitate weekly meetings with Galley leadership; discuss operational issues and updates of new productsOversee ordering and stock control of the seafood and meat production areasWork with Hotel Stores Manager on inventory controlsEnsure that all requisitions and stock control procedures in all outlets are being followed; hold Galley leaders responsible for proper requisitioningMonitor all culinary standardsEnsure Disney Cruise Line and USPH sanitation requirements are met in area of responsibilityMeet food cost budgets and targets as set by the Food Manager onboardMonitor cost controlEnsure facilities and equipment are maintained and in good working orderMonitor/implement garbage separation and disposal proceduresImplement and monitor Location Operating GuidelinesHandle and resolve guest complaintsMonitor handling, maintenance, and reordering of operating equipmentCoordinate all food offerings including group offerings and special requestsFacilitate department meetingsExecute additional job responsibilities, as assigned by DCL leadership, based on operational needComply with all company set policies and procedures, along with all maritime and ship rules, regulations and proceduresParticipate in Emergency Duties as specified in the ship Assembly PlanAlternate Country / RegionShipboardAlternate City-- Alternate Postal Code--
